Season both Burger patties on both sides with S&P. Place patties onto a 400°F flattop. Sear on one side until well caramelized, about 2 minutes.
Place 6 oz fries into a 350°F fryer. Cook until golden brown and crispy.
Carefully flip burger patties over.
Place one slice of cheese on each patty. Continue cooking until caramelized on the bottom and cheese is melted.
Toast bun.
Spread 1 Tbsp Special Sauce evenly over each half of the bun, ensuring coast-to-coast coverage.
Layer Pickles across the bottom half of the bun.
Stack one Burger patty on top of the other. Place patties on top of the Pickles. Close the sandwich.
Place sandwich onto the plate, as shown in the photo. Serve with specific Sandwich Accompaniment noted below.
When french fries are golden brown and crispy, drain well then transfer immediately to a stainless-steel bowl. Season with .25 tsp S&P. Toss fries to ensure even coverage. Stack fries on plate, as shown in the photo. Serve with 1.5 fl. oz. ketchup in a ramekin next to the fries, as shown in the photo.
