    Sanitize all work areas, cutting boards, equipment and sinks used in the preparation of this recipe.

    Remove ground beef from packaging, leaving any purged liquid behind. Do not roll or remix beef before forming into patties.

    8 OZ PATTIES | Using gloved hands, portion 8 oz into patties.

    Place patties between two sheets of patty paper, being sure not to overwork the meat, or pack patty too tightly. The formed patty should be 5" wide by ½" thick.

    4 OZ PATTIES | Using gloved hands, portion 4 oz into patties.

    Place patties between two sheets of patty paper, being sure not to overwork the meat, or pack patty too tightly. The formed patty should be 5-1/2" wide by 1/4" thick.

    Place formed patties in between two sheets of patty paper.

    Transfer to clean food storage containers. Cover, label, date and store refrigerated.
