Heat the tortillas either by running them through the conveyor toaster, or lightly charring both sides on a plancha, grill or burner. Once heated, place the tortillas onto a sizzle platter.
Evenly distribute cheddar and Beef onto each tortilla.
Place sizzle platter into a 450°F oven for 2-3 minutes until the beef is heated through and the cheese melted then remove from the oven.
Evenly distribute the first measurement of special sauce amongst the tacos.
In a mixing, combine lettuce, tomato, onion, S&P and the second measurement of Special Sauce. Toss until lettuce is evenly coated.
Evenly distribute the salad onto each taco.
Carefully place the built tacos into the taco holders. Place tacos onto the underliner.
Garnish with 2 leaves of cilantro on each taco.
