Combine apple juice, fall spice mix, pineapple shrub, mission fig syrup, woodford reserve bourbon and the 1st scoop of Ice into a mixing glass.
Cap, then shake vigorously 20X, until chilled.
Remove cap.
Add club soda.
Fill a collins glass with the 2nd scoop of Ice.
Strain drink over the Ice.
Garnish with a mint sprig.
