Combine Simple Syrup, bitters, whiskey and a scoop of Ice into a mixing glass.
Gently stir 20X, until chilled.
Spritz a DOF glass with absinthe.
Place a Large Format Ice Cube into the glass.
Strain drink over the Ice.
Twist a lemon peel over the drink, rub it around the rim, then drop it into the drink, as shown in the photo.
Gently stir the drink.
