Butterfly the shrimp, splitting completely into two halves.
Transfer shrimp to a mixing bowl. Evenly distribute evoo and the Jerk Spice Blend. Using gloved hands, mix until the shrimp are thoroughly coated.
Transfer to clean food storage containers. Cover, label, date and store refrigerated.
