    Sanitize all work areas, cutting boards, equipment and sinks used in the preparation of this recipe.

    Verify stainless-steel bowl is in the freezer before prepping and gathering ingredients.

    Gently heat cracked fennel seed, sugar and water in a saute pan over medium heat until fennel blooms and becomes fragrant, and sugar dissolves.

    Remove from the heat. Cool slightly.

    Combine all ingredients into the chilled bowl.

    Using gloved hands, gently mix together until ingredients are evenly distributed throughout the sausage. Do not overwork.

    Using a red handled #24 vollrath disher, scoop level portions of the sausage onto parchment lined sheet trays.

    Cook sausage in a preheated 375°F until an internal temperature of 165°F is reached, about 8-10 minutes. Verify temperature with a thermometer.

    Carefully rotate the trays halfway through, if needed, to ensure even cooking.

    Remove from the oven. Cool completely.

    Transfer to clean food storage containers. Cover, label, date and store refrigerated.

*IF GRINDING CHICKEN IN HOUSE: Verify grinding attachments are in the freezer before prepping and gathering ingredients. Using gloved hands, assemble the chilled grinder with the 1/4″ coarse die. Using the plunger, carefully process chicken thighs. Transfer to clean food storage containers. Cover, label, date and store refrigerated.
