Sanitize all work areas, cutting boards, equipment and used in this recipe
In a small bowl whisk water and egg to create egg wash. Set aside.
Cut thawed puff pastry square in quarters to create 4 2.5" x 2.5" squares.
Using gloved hands or a brush, brush egg wash on 2 of the squares. Place 1 square, egg wash- side up on a parchment- lined sheet tray. In the center of the square place slice of guava paste and top with cream cheese.
Place second egg washed square egg wash side down on top of guava and cream cheese ensuring the edges line up with the bottom piece. Pinch the edges of the dough to seal the top and bottom together.
Using a pairing knife, cut a small slit approximately 1" in the center of the top of dough. Brush top with egg wash and sprinkle with demerara sugar.
Bake in a 375 degree oven, hi fan on, for 5- 8 minutes or until golden brown and fully cooked.
Transfer to a clean food storage container. Cover, label, date and store at room temperature for up to 12 hours.
