Combine grapefruit and lime juices, Simple Syrup, mezcal and sage leaves to a clean mixing glass and muddle.
Add one scoop of ice, cap, then shake vigorously 20X, until chilled.
Remove cap.
Garnish a DOF glass with salt on half the rim, as shown in the photo.
Fill glass with second scoop of Ice. Strain drink into prepared glass.
Garnish with a sprig of sage as shown in the photo.
