    Sanitize all work areas, cutting boards, equipment and sinks used in the preparation of this recipe.

    Verify stainless-steel bowl is in the freezer before prepping and gathering ingredients.

    Combine all ingredients into the chilled bowl.

    Using gloved hands, gently mix together until ingredients are evenly distributed throughout the mixture. Do not overwork the meat.

    Using a red handled #24 vollrath disher, scoop meatballs into 1.5 oz portions, by weight, onto parchment lined sheet trays.

    Roll each portion into a ball. Do not overwork.

    Cook meatballs in a preheated 350°F oven until an internal temperature of 165°F is reached, about 12 minutes. Verify temperature with a thermometer.

    Carefully rotate the trays halfway through, if needed, to ensure even cooking.

    Remove from the oven. Cool completely.

    Transfer to clean food storage containers. Cover, label, date and store refrigerated.

*IF GRINDING CHICKEN IN HOUSE: Verify grinding attachments are in the freezer before prepping and gathering ingredients. Using gloved hands, assemble the chilled grinder with the 1/4″ coarse die. Using the plunger, carefully process chicken thighs. Transfer to clean food storage containers. Cover, label, date and store refrigerated.
