Sanitize all work areas, cutting boards, equipment and sinks used in the preparation of this recipe.
Insert one filter bag into the strainer bag. Place into the brewing container with the open ends facing up.
Pour ground house blend into the filter bag. Add 2 quarts of cool Filtered Water into the filter. This should saturate all of the coffee grounds.
Tie the filter bag approximately 3" from the top. Leave plenty of room for the coffee to move around, otherwise it may result in a weak coffee concentrate.
Gently massage the grounds in the strainer to ensure equal saturation.
Add the remaining 1.5 gallons of cool Filtered Water to the brewing container.
Cover with the lid. Let brew undisturbed for 24 hours. Use a daydot sticker to track when the brewing process started. Brew in a cool area, but do not brew in refrigeration.
Drain concentrate. Transfer to clean beverage storage containers. Cover, label, date and store refrigerated. Reserve until ready to turn into Cold Brew > Step 8.
Transfer 2 quarts of reserved concentrate to a 1 gallon container.
Add 2 quarts of cold Filtered Water, creating 1 gallon total of 50-50 ratio of concentrate to water.
Repeat Step 9 until all concentrate is properly mixed with cold Filtered Water at the 50-50 ratio.
Cover, label, date and store refrigerated.
