Bread Pudding – White Chocolate

    Sanitize all work areas, cutting boards, equipment and sinks used in the preparation of this recipe.

    Place Swiss Oval slices into a 4" metal hotel pan. Set aside.

    Combine whole eggs and yolks into a stainless-steel bowl, as shown in the video.

    Whisk together until thoroughly combined and smooth. Set aside.

    Gently heat cream, milk and sugar in a heavy bottom pot over medium heat until they come to a light simmer and reach 140°F.

    Stir until the sugar dissolves. Remove from the heat.

    Carefully add white chocolate.

    Continue stirring until the chocolate melts, and the sauce is smooth.

    Carefully whisk in the reserved egg mixture in a slow steady stream, being careful not to cook the eggs.

    Pour the custard over the bread.

    Agitate and break up the bread, bringing the custard up to the top and fully incorporating the bread so that it soaks evenly.

    Allow to soak until the bread is completely saturated with the custard, about 1 hour to 1 hour 45 minutes. Time will vary based on the density of the bread.

    Line *full 4" metal hotel pans with parchment paper. Lightly coat paper with non-stick spray, ensuring all corners are coated.

    Spread bread pudding evenly into the hotel pans.

    Cover with parchment paper, then gently press to level the surface. Allow to rest for 30-60 minutes.

    Remove parchment paper, then cover with foil.

    Place Bread Pudding onto sheet trays, then into the oven. Create a water bath by adding hot water to the sheet trays.

    Bake in a preheated 350°F oven, no fan, for 1 hour. Remove foil.

    Continue baking, fan on, until golden brown on top, and a cake tester comes out clean when inserted into the center, about 15 minutes.

    Remove from the oven. Cool completely. Best practice is to cool overnight.

    Flip the Bread Pudding onto a large cutting board. Follow the Bread Pudding Cutting Procedure.

    SERVICE | Transfer to clean airtight food storage containers. Cover, label, date and store refrigerated.

    FREEZING | Place Bread Pudding portions onto parchment lined sheet trays, ensuring they do not touch. Cover and freeze overnight.

    Transfer frozen Bread Pudding portions to clean airtight food storage containers. Cover, label, date and store frozen.
