Combine lemon juice, Simple Syrup, gin and a scoop of Ice into a mixing glass.

Cap, then shake vigorously 20X, until chilled.

Add prosecco.

Strain drink into a champagne flute.

Twist a lemon peel over the drink, rub it around the rim, then drop it into the drink, as shown in the photo.
